Introduction： 淀粉水解酶催化淀粉水解生成还原糖，还原糖还原3,5-二硝基水杨酸生成棕红色物质，在540 nm有吸收峰；通过测定540 nm吸光度增加速率，计算淀粉酶活性。α-AL耐热，但是β-淀粉酶可在70℃钝化15min。因此粗酶液经过70℃钝化15min，就只有α-AL能够催化淀粉水解。
