Introduction： 酶活定义：一个酶活性单位是指在pH 7.5、37℃条件下，每分钟水解酪蛋白并产生相当于1.0 μM (181 μg) 酪氨酸的颜色（使用Folin-Ciocalteu试剂显色）所需的酶量。
酶活：50-100u/mg protein
说明：最适pH为8.0，活性的最适温度为70℃。在pH 5-9.5范围内非常稳定。嗜热菌蛋白酶具有较低的切割特异性，因此，它能产生许多适合测序的短片段。优先切割顺序： X-切割-Y-Z，其中X = 任何氨基酸；Y = Leu，Phe，Ile，Val，Met，Ala；Z是除Pro以外的任何氨基酸。切割Leu的N末端优先于切割Phe的N末端，它们优于其他氨基酸。
